My new favourite blueberry smoothie

My new favourite blueberry smoothie

Inspired by the Barry’s menu, this was a bloody tasty shake.

I’ve had it almost every day for the past two weeks. Being obsessed with my protein powder helps.

What to expect

Thick, properly cold, and more like a shake than a thin smoothie. The yogurt and the peanut butter are doing quiet work here - the yogurt gives it body so it does not separate while you drink it, and the peanut butter rounds off the edge that protein powder can leave.

Getting the consistency right

This is the bit worth fussing over. Start with less milk than you think, blend, and then add more a splash at a time until it moves the way you want it to. More ice makes it thicker and colder but waters the flavour down as it melts, so if you want it really thick, use frozen blueberries instead of extra ice and keep the milk low.

Swaps

Frozen blueberries work as well as fresh and make it colder. Any milk is fine - oat gives you the creamiest result. If vanilla protein is not your thing, an unflavoured one plus a date or a spoon of honey does the same job. The handful of greens genuinely disappears into the blueberries, so it is an easy one to sneak in.

Make it ahead

Weigh the blueberries, protein powder and peanut butter into a freezer bag and keep a few in the freezer. In the morning it is a bag, a cup of milk, and thirty seconds in the blender.
