Pesto & hot honey halloumi gnocchi

Gnocchi mixed in bowl (left), gnocchi plated up with rocket (right)

I have gone through phases of meal prepping depending on what I'm doing for my job, and let me TELL you, this is an absolute winner for a fun lunch in the office and is SO easy to make.

Feel free to sub the halloumi out for any other protein to make this your own!

Method

  1. Preheat your air fryer to 190°C.
  2. Add the gnocchi to a large bowl with the olive oil, 2 tbsp pesto, mixed herbs and a generous crack of black pepper. Toss until everything is evenly coated.
  3. Add the gnocchi to your air fryer basket in an even layer. Air fry for 8 minutes, shaking halfway through.
  4. Meanwhile, slice your red pepper into strips and cut the halloumi into chunky cubes.
  5. Add the halloumi and red pepper to the air fryer with the gnocchi. Cook for another 7–10 minutes, shaking or turning halfway through, until the gnocchi is crispy, the peppers have softened and the halloumi is golden.
  6. Transfer everything to a large bowl and toss through the remaining tablespoon of pesto.
  7. Serve over a handful of fresh rocket, drizzle generously with hot honey and finish with a little extra pesto.
