Strawberry avocado toast

Ingredients

• 1/2 avocado
• Small handful spinach
• 4-5 strawberries
• 1 garlic clove
• 1 piece toast
• Lemon juice
• Balsamic vinegar
• Hot sauce
• 1-2 eggs

Method

1. Cook your eggs any way you like. I fried mine.
2. Toast your bread when your eggs are almost cooked, then whilst your bread toasts, slice an avocado into chunks, and scoop out into a bowl.
3. Add a small handful of spinach, and some sliced strawberries, and mix with a squeeze of lemon juice, some balsamic vinegar, and some salt and pepper.
4. Rub your toast with a peeled garlic clove (don’t use the whole thing), then top with your strawberry, avocado and spinach, and your eggs.
5. Add hot sauce to your hearts desire, and season.
